Prime Rib! We haven’t done one of these in way too long. We put the garlic and rosemary rub on it yesterday to give them a good long time to really flavor the roast. We use Cook’s Illustrated Inexpensive Gas-Grill-Roasted Beef with Garlic and Rosemary recipe, but using prime rib. We have to get the prime rib custom cut at our new favorite butcher, Your Butcher, Frank since King Soopers and Whole Foods no longer have it.
Here’s the very start of the grilling, and we’re already getting some good applewood smoke!
The hummers don’t really care about Martin tending the grill.
The Au Jus, which we cheat on, and the prime rib with tonight’s dinner slice, the end already cut. We use Minor’s Au Jus, they do a really good one!
And finally after almost 2 hours on the rotisserie, dinner is served! Wow! The applewood smoke, garlic and rosemary all came together for a truly awesome prime rib roast!
