At long last, we documented a visit to one of the best pizza places you’ll ever find - Pizzeria Alberico! This is part of the Frasca Hospitality Group, so you know it’s going to be special. For example, they fly in their buffalo mozzarella from Italy!
We were sitting at the bar, which is right in front of the make table. Martin, as usual, didn’t get it quite right. The chef had just put a new piece of wood on the fire. The chefs like to raise the pie up into the smoke, since its only in the oven for maybe 90 seconds, not long enough to pick up enough smoke just sitting on the floor of the oven.
Here they are making an interesting seasonal pie - one that has Pallisade Peaches on it. These are from part of the west slope of the Rocky Mountains in Colorado.
Martin’s Caesar Salad - wow, the lemon anchovy dressing really made this a stand out!
Bill had the Antica salad, which is a classic here. They’ve been making it since they opened as Pizzeria Locale. It’s arugula, parmigiano-reggiano, balsamic glaze and olive oil.
The wine was an amazingly deep, almost purple, color. It was a pretty big red, plum on the nose with some spice notes.
The main event! A Pizza Diavola with double salame piccante, smoked mozzarella, pecorino roman, basil, calabrian chile, and garlic oil. The crust gets lightly charred, but that just adds to the incredible bouquet of flavors!
