I had to document our 2nd trip to Cheese Importers! This place is absolutely incredible! We’ve never seen anything like it.

Here’s a perfect example of “Don’t Judge A Book By Its Cover”! The entrance is at the back of the building because the front is right on Main Street in Longmont and therefore all the parking is at the back.

Just inside the door and it’s instantly obvious that this is no ordinary shop!

We’ve now walked back and left and are about to enter the Cheese Cave. There’s a reason that there is a whole rack of jackets to the right of the door!

All of the following shots are taken inside the Cheese Cave.

Here’s an overall shot of one corner.

This is the refrigerated case at the left of the overall shot, for various items that need to be really cold. They’ve got some Ortiz items that we’d never seen before.

This is just to the right of the case. In the middle is a wide variety of charcuterie and the sign on the shelf in front of the silver boxes at the top left of the shelves says:

Block of Fattened Duck Liver

Made with pure duck foie Gras - a highly prized delicacy of the southwest region of France - flavored with Sauternes wine, Cognac and spices. Pork-free.

Completely decadent on warm brioche bread with fig jam and a glass of Sauternes.

The right side of the shelves, wow! Martin had to be pried loose from all of the different patés!

Further right, we now see more types of mustards than I've ever seen. I’m overwhelmed. This place needs most a day, not just a few minutes!

Now in a completely different spot in the cave. Wanted to remember that they’ve got French Gherkins or Cornichons. They’re not so vinegary as American ones. Martin really likes them.

Just about to leave the Cheese cave. This is where Chef Dane Bellamy got the Niçoise olives for Bill’s birthday dinner salad Niçoise
