Another one of our very easy dishes which we’ve never documented. This is Sloppy Joes Semma and I can’t link to the February 1994 Gourmet Magazine that it came from because Gourmet is no longer with us. Losing them was painful!

The mise en place. Here’s the whole recipe for a single batch.:

1 lb. Ground Beef - really lean because it’s almost impossible to drain extra fat off

1/2 Cup chopped Onion

1 cup ketchup

1 tbsp. apple cider vinegar 

1 tbsp. lemon juice

1 tbsp. Worcestershire sauce sauce

1 tbsp. brown sugar

1 tsp. Dijon mustard 


Sauté beef and onions over moderately high heat until meat is no longer pink and is starting to brown. Add the remaining ingredients and cook until thickened, about 30 minutes.


We did a quadruple batch so everything there is multiplied by 4. 4 tablespoons is conveniently a 1/4 cup and 4 teaspoons is 1.3 tablespoons, not so convenient, so we use a scant tablespoon and a half.
