This time we didn’t wait so long. Time for Carbonnade a la Flamande, or Belgian Beef, Beer, and Onion Stew, which we last did on February 1, 2025.
We’ve found a few time savers for the Mise en Place. The already minced garlic is now available in the supermarket and it’s pretty much indistiguishable from freshly minced garlic. The flour is in a really neat measuring container from Oxo, they seem to have discontinued the stainless steel version, but they still carry the plastic mini angled measuring cup. Having the measurement spread out over the angle really works!
The star of the show deserves his own picture (Martin actually forgot to get it into the mise en place shot)
This strong Chimay Belgium Ale really makes the dish!
The very start of the 1st round of chuck browning.
That Martin didn’t get this shot until the parrot was already packed. Livingstone approves of even the noodles if they’re soaked in enough of the Carbonnade!
