Its time to do some grilling! Bill discovered Pulgogi during his Air Force tour as a Korean linguist. Long ago he found an english translation of a Korean cookbook and we’ve been making that version of Pulgogi for a while. It can also be spelled Pulkogi if you’re following the McCune–Reischauer romanization (Bill’s a former linguist) . Here’s the recipe
1lb beef, sirloin preferred
4 tbsp soy sauce
1 tbsp saki (or dry sherry)
2 tbsp sugar
4 tbsp green onions
2 tbsp sesame oil
1 tbsp sesame seed, toasted
1 tsp sesame seed
2 tsp garlic
1 tsp ginger
dash of pepper
Roast the tablespoon of sesame seed, chop onions finely (whites & lighter green parts). Mix everything but beef into marinade. Slice beef into thin strips. Marinate in sauce for 30-40 minutes. Grill to taste.
Here’s the sirloin marinating.
A bit of cleverness - we use the fish basket to hold most of the pieces so that Bill doesn’t have to play The Flash when he’s turning them, just flip the basket over.
Yeah! All of the pieces fit, so auxilary basket doesn’t need to be used.
Here they are after 3 minutes a side over the Weber’s sear burner at about 550 °F. That gets us just a bit more done than medium rare, which is needed to pick up enough of the mesquite smoke.
Livingstone has thrown rice all over the place! This is his second chow down. He really likes the sesame seeds.
