Monday, October 12, 2026 Gazpacho!

Wow! The tomatoes were perfect, incredibly ripe and tart, perfect for Gazpacho. We use America’s Test Kitchen’s Quick Food Processor Gazpacho. The food processor turns this from an hours long production to an easily doable dish.

The mise en place. The olive oil is added at table. We don’t use 5 cups of tomato juice either, just 2 is plenty. That’s a sweet onion, a regular onion is too strong.

Each of the main ingredients is processed separately, since they all need a different amount of time in the processor. We start with the tomatoes.

Next the bell peppers. We didn’t quite process them enough. Since you can’t really peel bell peppers, you have to get the pieces down small enough so that the skin is in tiny pieces and doesn’t distract.

You can really see that the bell peppers are a bit too coarse.

The finished dish.

Quality Control has to check everything out!

We used the gazpacho for the side dish with shrimp cocktail on Friday the 16th. Livingstone was totally taken with the shrimp and didn’t check out the gazpacho.

Our favorite cocktail sauce is Old Bookbinders. It is a must try!
