    This is also know as Steak Florentine and it is amazingly good for being so simple. Really good steaks, rubbed with garlic as they come off the grill, then drizzled with olive oil and sometimes lemon at table. This really shows off the steaks perfectly.

You need a really good red wine to go with the filet mignon we had. This Willamette Vally Vineyards Pinot Noir Estate 2022 was just right. It isn’t a big red, but you don’t want the the garlic and olive oil to be overwhelmed. Wine Spectator didn’t rate this one, but the 2023 came in at 90 points and they described it just like this one tasted:


Fragrant and elegantly balanced, with lively flavors of cherry and cranberry highlighted by spice and lemon verbena accents as this zips along the snappy finish.

This is so simple that Martin didn’t decide to document it until now. That’s why the wine label has a streak of red wine on it, we’d already poured a couple of rounds.
